Happy Thanksgiving!

If you know me, you know I don't cook. Dan happily accepts responsibility for all the grocery-shopping, meal-planning, and cooking. (Don't hate me!)

However, when it comes to a few recipes, I'm flattered that my family likes them enough to ask me to make them. I can expect each year to be asked to make "Sensational Double Layer Pumpkin Pie." Our family calls it the "cheesecake pumpkin pie."

It's certainly not my recipe, but in fact was clipped from a Jello pudding magazine advertisement many years ago.

Still, the recipe is a family favorite, and I have no doubt that my daughter and daughter-in-law are making it for their families this Thanksgiving.

For one thing, it's easy. For another, it's "no bake."

I know it's late to make pie for Thanksgiving, but I offer it here anyway. Who says pumpkin pie has to be limited to eating at holidays?

Sensational Double Layer Pumpkin Pie (AKA "Cheesecake Pumpkin Pie")

4 ozs. cream cheese, softened
1 T milk or Half-and-Half
1 T sugar
1½ cups Cool Whip
1 - 6 oz. graham cracker pie crust 
1 cup milk or Half-and-Half
2 boxes of Jello Vanilla flavor Instant Pudding & Pie filling (4-serving size)
1 - 16 oz. can pumpkin
1 t. ground cinnamon
½ t. ground ginger
¼ t. ground cloves

In a large bowl, use a wire whisk to mix cream cheese, milk and sugar mix until smooth. 
Gently stir in Cool Whip. Spread on bottom of pie crust.

Pour 1 cup milk into bowl. Add pudding mixes.
Beat with wire whisk until well-blended, 1 to 2 minutes. Mixture will be thick.
Stir in pumpkin and spices. Mix with whisk. 
Spread over cream cheese layer.


Covered, and ready to refrigerate.
Refrigerate at least 3 hours. Garnish with additional Cool Whip, and nuts if desired. Makes 8 servings.

I am grateful for many things this Thanksgiving - 🙏 my Lord who never fails me; my family; my home; and my new Bernina sewing machine 😄.

  4. I know more husband's who do most of the cooking and shopping. My son, for one, has always cooked and loves to smoke meats. He's a big help in the kitchen too...and my son in-law is also a cook!! Daughter cooks as well but he is home before she during the week so he does the cooking. And our friends in Florida there are several who cook! My hubby is good at "so what time is dinner/breakfast/lunch" Ha although this past month or two I have asked him to go grocery shopping with me! He'll do that if I ask, which is a big help. Lucky you!! Enjoy! I'm sure through the years you did your share of cooking. HA

  6. Hi Linda, Happy thanksgiving to you, too! I just visited your post on no-tails binding and found it helpful. I tried it when you did the MQG video, but the production quality of that video made it frustrating. Your tutorial is good and I look forward to trying again. I'm hoping it limits the potential for "wavy edges" on my larger quilts. Thanks!

I'm sure sorry to hear about the poor video quality of the MQG webinar. I had no idea! I've made it a point to NOT watch my own webinar, as I find seeing/hearing myself very disconcerting. :-) If you give me your email address, I will send you a document "cheat sheet" of the steps for this binding method. I hope you find this method helps with the finished look of your quilts. My best...

    We sure did. I had the whole fam at my house.
    I will not allow my hubbs to cook, oh gosh.
    I also hate cooking but I like making simple healthy stuff.
    This pie..... I love pumpkin pie but I HATE cool whip. There is something in it that makes my tummy sick.
    I used to like Costco pies but now I like Marie Calendars pies, and Wegmans makes a decent pie.
    I hope you are having a good week. Here, I just need sleep.
    I am going to see my tiny babies tomorrow, and then on to other things mountains of things. I have been doing hand sewing.... :-P
